Rose Flavored Rice Kheer

Ingredients
  • ¼ Cup Basmati Rice Soaked for 30 min
  • 1 Litre Full Fat Milk
  • 3 tbsp Chopped Cashew Nuts
  • ¾ Cup Sugar
  • 3 tbsp Chopped Pistachios
  • Few Drops of Rose Essence you can substitute this with other essence/ cardamom
  • 3 tbsp Chopped Almonds
  • Some Chopped Dry Fruits for Garnishing
  • Rose Petal and Edible Silver Leaf for Garnishing optional
Instructions
  1. Take 1/4 cup basmati rice and soak it in water for 30 min.
  2. After 30 min, rinse the water and break the rice in small pieces using your fingers if you are using whole rice grains. Skip this step If you are already using broken rice grains.
  3. In a thick bottom utensil, add 1 litre of full fat milk and switch on the flame.
  4. Bring this milk to a boil and then add soaked rice to it.
  5. Constantly stir the kheer so that it does not stick to the bottom and burn.
  6. 5 min after adding the rice, add 3/4 cup sugar. You can increase or reduce the quantity as per your taste.
  7. After 10 min of cooking and constant stirring, add 3 tbsp chopped cashew nuts, almonds and pistachios each.
  8. Cook this further and scrape the sides occasionally.
  9. Add few drops of rose essence after about 25-30 min of cooking.
