Instant Jalebi Recipe

Jalebi is one of the most liked Indian desserts and relished during breakfast. The traditional Jalebi recipe is time consuming and it involves fermentation of the batter. We bring you a quick and easy variation of the recipe to make instance Jalebis.

For batter:
  • ½ Cup maida
  • 1 Tbsp cornflour
  • ¼ Tsp baking soda
  • 1 Tbsp curd
  • ¼ Tsp baking powder
  • Orange/Yellow food color
  • ¼ Tsp citric acid
  • Water as required
For Sugar syrup:
  • 2 Cups sugar
  • ½ Cup water
  • 1 Tbsp milk
  • ¼ Tsp lemon juice
To make sugar syrup:
  1. Add 1 cup water in a pan, switch on the flame and add 2 cup sugar.
  2. Mix this well till the sugar dissolves in the water.
  3. Now, add 1 tsp milk. It will help remove the impurities from the syrup. This will form a scum at the top which should be removed using a spoon and a strainer.
  4. Boil the syrup to a consistency where a complete string is not formed.
  5. After few min of cooking, add 1/4 tsp lemon juice. This will avoid crystallization of sugar.
  6. Add a few strands of saffron to the syrup. You can substitute this with cardamom as per your taste. Switch off the flame and keep it aside.
To make batter:
  1. Take 1/2 cup plain flour (maida) in a bowl and add 1 tbsp curd, 1 tbsp cornflour, 1/4 tsp citric acid, 1/8 tsp yellow or orange food color. Mix the dry ingredients well.
  2. Start adding little water at a time to make a batter of medium consistency.
  3. Add 1/4 tsp of baking soda and baking powder. Mix this well.
To fry the jalebi:
  1. Make a piping bag using a plastic sheet or you can use piping bag. Pour the batter in the piping bag and seal the open end with some rubber bands. Cut the tip of the piping bag as per preferred thickness of jalebi.
  2. Heat oil or ghee in a flat bottom frying pan and start piping the jalebis. Make sure that the tip of piping bag is close to the oil, this helps in making better shapes.
  3. Fry them till they become crispy. Once done, take them out and dunk them in the sugar syrup. Keep them in for around 20 seconds to allow them to soak the sugar syrup.
  4. Take them out of syrup and serve them right away. Enjoy!
