Sitaphal Soft Serve Ice Cream | Custard Apple Ice Cream

This recipe shows two ways to make Custard Apple Ice Cream, one with ice cream machine and other without it. Both the methods results in creamy and delicious ice cream. Let me know in the comments section below which method did you like and would prefer!

INGREDIENTS

For batch using ice cream machine:

  • 200 ml full fat milk
  • 400 ml Amul’s fresh cream (comes in blue carton)
  • 1 Cup + 1 Tbsp sugar
  • ½ Cup custard apple pulp (sitaphal)
  • ½ Tsp CMC powder
  • 2 Tbsp GMS powder
  • 2 Tbsp cornflour

For batch without ice cream machine:

  • 200 ml full fat milk
  • 400 ml Amul’s fresh cream (comes in blue carton)
  • 1 Cup + 1 Tbsp sugar
  • ½ Cup custard apple pulp (sitaphal)
  • ½ Tsp CMC powder
  • 2 Tbsp GMS powder
  • 2 Tbsp corn flour

METHOD

To make one batch of ice cream mix:

  • Take 2 tbsp GMS powder, 2 tbsp corn flour, 1/2 tsp CMC powder and make a paste by adding some milk (from 200 ml).
  • Boil remaining milk in a pan and mix 1 cup + 1 tbsp sugar with it.
  • Add the powder mix to the milk; mix and cook till it thickens. Let it cool when it is done and then strain it to remove any lumps.
  • Now, deseed the custard apple (sitaphal) using a strainer to get 1/2 cup pulp. Mix this with the powder mix along with 400 ml fresh cream.
  • Similarly, make another batch with same ingredients. So, we need two such batches of ice cream by following the same method.

To make ice cream with ice cream machine:

  • Take a batch of ice cream mix and freeze it for 30 min.
  • You will have to freeze the machine bowl for at least 6-8 hours or more before starting with the process.
  • Place the frozen bowl in the machine, place the paddle on and set the timer to 30 min. Start the machine and start pouring the ice cream mix.
  • Let the machine churn the mix for 30 min and your soft serve style ice cream will be ready. You can freeze it if you prefer regular ice cream like consistency over soft serve.

To make ice cream without ice cream machine:

  • Take another batch of ice cream mix and freeze it till it becomes hard.
  • Once it is set, take it out in a bowl, break into small pieces and beat it using an electric beater till it becomes very light and fluffy. This should rise 2-3 times in volume.
  • Transfer it in an air tight container and freeze it till it sets.
