Carrot Juice

This is a very tasty version of carrot juice! You can skip the sugar used in this recipe to make it healthier. Those who don’t like carrot should also give this one a try. Make sure you use the red-orange carrots not those which are orange in color.

INGREDIENTS

  • 500 gm carrots
  • 1 & 1/2 Cups chilled water (cold water)
  • 1/4 Cup mint leaves (Pudina)
  • Juice from half lemon
  • 1/4 Tsp black salt or as per taste
  • Regular salt as per taste
  • Juice from half lemon
  • 3-4 Tsp sugar (Using 3 Tsp). This is optional.
  • Ice cubes

METHOD

  • Take 500 gm washed and dried fresh red carrots. Chop off their head and cut them into small pieces.
  • Transfer the chopped carrots to a mixer jar followed by 1&1/2 cup chilled water. Grind the carrots to a smooth puree.
  • Strain the puree to separate all the juice from the pulp. You can use the pulp to make parathas by adding some spices, so do not throw it away.
  • Add 1/4 cup mint leaves to a mortal & pestle and juice from half lemon. Muddle the leaves gently to release the flavours.
  • Add this to the carrot juice followed by some black and regular salt as per your taste.
  • Now add juice from half lemon, 3-4 tsp sugar (optional) and mix well.
  • Serve this juice chilled over a good amount of ice cubes and Enjoy!
