Aam Panna | Raw Mango Cooler

Healthy, Cool & Refreshing; these words explain the characteristics of this drink! Yes, it is Aam Panna, a common drink found in Indian homes during summers.
This is made using different methods and ingredients in different parts of India. Also, it has different names by region e.g. Aam panna, aam panha, amiya pana, aampora shorbet.

In this recipe, I am using the method I have seen since my childhood and giving some twists to the traditional preparation. Lets beat the heat this summers with these cool variations if aam panna.

INGREDIENTS

For Basic Pulp:

  • 1/2 Kg Raw Mango – Using Kalmi variety here
  • 1 and 1/2 Cup Sugar

Jeera/ Cumin Flavour:

  • 1 & 1/2 Tsp roasted Cumin/Jeera powder
  • 1/2 Tsp black salt
  • 4 Cups water
  • Salt to taste

Ginger Flavour:

  • 2 Tbsp ginger Juice
  • 4 Cups water
  • 1/2 Tsp black salt
  • Salt to taste

Lemon Mint Flavour:

  • 1/2 Cup fresh mint leaves
  • 1 Medium sized lemon
  • 4 Cups water
  • 1/2 Tsp black salt
  • Salt to taste

METHOD

To Make Basic Pulp:

  • Take 1/2 kg of raw mango of variety and boil them till they are soft. It would take approximately 2-3 whistles in a pressure cooker to cook the raw mangoes.
  • Once the mangoes cool down to room temperature, take out the pulp from the skin and the seed with the help of a spoon.
  • Add 1 & 1/2 cup sugar to the pulp and mix it well till sugar is partially dissolved in the pulp.
  • Pour the pulp in a blender pot and blend it to a smooth paste.
  • Strain the mango pulp if it contains any threads after blending.
  • To make three varieties of aam panna, divide the pulp in three equal parts.

To Make Cumin/Jeera Flavor:

  • Take 1/3 pulp in a big bowl, add 1 & 1/2 Tsp of roasted cumin/jeera powder and 1/2 Tsp of black salt and give it a good mix.
  • Add 4 cup cold water in the pulp. You can also add regular water and chill the aam panna before serving.
  • Add salt to taste and mix it well. Taste the aam panna and adjust the seasoning as per your taste. Jeera/cumin flavoured aam panna is now ready!

To Make Ginger Flavor:

  • Take 1/3 pulp in a big bowl and add 1/2 Tsp black salt.
  • Grate some fresh ginger and squeeze it to take out the juice. Add 2 Tbsp of this ginger juice to the pulp.
  • Now, add 4 cups of cold water and give it a good mix.
  • Add some salt to taste and mix it well. Adjust the seasoning as per your taste to finish second variety of aam panna.

To Make Lemon-Mint Flavor:

  • Add 1/2 cup fresh mint leaves to a mortar and pestle (aka khalbatta/hamam dasta) and muddle the leaves. Do not over muddle the leaves as we want the pieces of mint leaves in our drink.
  • Squeeze juice from a medium size lemon to the muddled mint leaves and mix them well.
  • Add the mint leaves and lemon juice mix to remaining 1/3 mango pulp.
  • Add 4 cups of cold water to the pulp and give it a mix.
  • Now, add 1/2 Tsp of black salt and salt to taste and give it a good mix. Again, you can adjust the seasoning as per your taste. The lemon-mint flavoured aam panna is now ready.
  • Chill the aam panna if regular water is used before serving!
